1- Energy (Heat):
It has been found that a temperature in the range of 90-96 C is good for making a good cup of coffee. To explain this, we need to understand the effect of heat on coffee extraction.
A clear indication of energy is heat, and the hotter an object is, the more energy it has. Also, heat transfers energy from molecules that have an excess of it to molecules that have less.
This applies to coffee brewing, as the heat used in coffee brewing water has a significant effect on extraction. A higher extraction temperature leads to an increased extraction rate because most compounds are more soluble at a higher temperature.
All of this leads to the conclusion that the temperature of the water used for brewing coffee is very important. If the water temperature is low, the prepared cup will be thin (low body), flat, and have a lower flavor profile.
With increasing heat, bitterness, acidity, harshness, burning, body, and flavor intensity increase.
