Brewing coffee with a Chemex
The elegant brewing device with its wooden collar and leather tie, crafted in 1941, is an essential tool for every coffee lover. Brewing with it is similar to any pour-over method, but this one requires a coarser grind.

What do you need?
- Coffee
- Chemex
- Filter
- Grinder
- Scale
- Timer
- Water kettle
Step One:
Start by heating (1.2 to 1.4) liters of water.
Step Two:
Prepare 50-60 grams of coffee.
Step Three:
While the water is heating, grind the coffee. The grind should be somewhat coarse, but finer than a French press grind.
Step Four:
Place the filter, making sure the triple-layered side faces the spout.
Step Five:
Rinse the filter with hot water to avoid a papery taste and to preheat the glass, then discard the water.
Step Six:
Evenly distribute the ground coffee for consistent extraction.
Step Seven:
Start by pouring water to wet the coffee, using double the amount of coffee, ensuring all the coffee is wet and avoiding the paper filter.

Step Eight:
Let the coffee bloom (you will see bubbles forming and the coffee expanding) for 45 - 60 seconds.
Step Nine:
Continue pouring water carefully in the center with a slight circular motion only at the beginning until you complete the rest of the water, at a sufficient rate so that the process finishes in 4 minutes.
